Veterans Day Weekend: Giving Back With Good Food

Join the JW Marriott Austin culinary team this Veterans Day weekend to celebrate and recognize veterans and veteran-owned businesses in the central Texas area. On Saturday and Sunday, November 10th and 11th, each of our onsite restaurants are featuring a special menu from Ranger Cattle — a veteran-owned local ranch that raises high-quality Wagyu beef. For every item ordered off of these Veterans Day menus, the JW Marriott Austin will donate 15 percent of the revenue to the Elk Institute, a non-profit that was established to provide mental health education, consultation, treatment, and clinical research services to our military and veteran communities.

Veterans Day Parade: Watch From Edge Rooftop Terrace

Join us on Sunday, November 11th, 2018 to watch the Veterans Day Parade from the best perch in downtown Austin. Tickets will be available for a $10 donation, with all proceeds going to Elk Institute.  Edge will also feature a Veterans Day menu where 15 percent of proceeds will be donated to the Elk Institute. The Story: How Food Inspired a Chef and a Rancher to Give Back

For Executive Chef Chad Blunston, a Saturday spent at the Farmer’s Market perusing locally sourced quality ingredients is just part of the job. What started as a conversation about quality, local and sustainably raised Wagyu beef with a stranger at a Farmer’s Market quickly led to a close friendship and partnership between the JW Marriott Austin and Josh Eilers, a veteran who also started the local Austin ranch, Ranger Cattle. Five ranch trips, two brewery visits, one tour of the processing plant, one passionate culinary team, and half a heifer later, the JW Marriott Austin team became determined to find a way to bring awareness to Ranger Cattle as well as to make an impact for local veterans.

Utilizing our culinary staff expertise, along with Chef Christian, a certified butcher, our team saw an opportunity to give back: by creating a sustainable and local menu utilizing every portion of the animals received from Ranger Cattle. Menus were created to utilize out of the ordinary cuts and techniques to avoid waste, and thus our featured Veterans Day Ranger Cattle Menus were born.
